I cover letter should not be longer than 1 pg, but it should be specialized to the position you are applying for. A couple of paragraphs usually covers it. If your cover letter is a full page, but you're going on about how you were a Chef and you're applying for a job as a Office Manager, the hiring director won't read half of your letter before it's tossed. Make sure that you include the skills / experience you have related to THAT position and how you think you can be an asset to the company. Make a statement that grabs the reader's attention in the beginning, then they will be sure to read the whole thing. If you only write two sentences, you'll look lazy.
