Both the first week of December as well as the entire month of September are "Value Season" at Disney. The other parks don't run "seasons" quite the same way, but early December (through around the 15th or so) is usually a really good time to visit - the weather is cooler and the crowds are usually a lot less. If you are planning to stay on Disney property, the resort rates are also quite a bit less - anywhere from $50 or so to several hundred dollars less than regular or holiday seasons.

Those that are still open at that time, I'd say yeah if it's not too cold. The crowds would be down and it wouldn't be stifling hot. That would be a great time to go to Disney World. You could probably get some deals because it's off season.

Dec is peak season here.
Feb is off season and when you get all the deals.

That's probably not bad, but when I lived in Orange County, near Disneyland, the very best day to go there was on SuperBowl Sunday. Very low crowds on that day!
