À la carte means basically two things: 1) a menu of items priced differently than the ones provided on the current menu, and 2) the option of getting something without what it is usually served with (ie: getting one item in a combo and nothing else).

Dim sum is a type of Chinese meal. Dim sum usually takes the place of a light brunch or lunch made of Chinese entries that are served in a dim sum resturant. It is a Cantonese word can is literally translated as "ordering what one wants" or "ordering to one's content". In a dim sum resturant you are offered a variety of steamed buns, rolls, and dumplings that are showcased by various waitresses who roll around their carts to your table. You pick what you want to eat from each cart and pay off of what you get and what size you pick. It is an efficient and delicious way to eat ^^.

(EDIT: Contrary to what most of the people answering are saying, I can assure you, as I am of Chinese heritage, that dim sum is not a set dish. For example: candy is a general type of food, but is not set in detail because chocolate, gummy bears, etc., are all types of candy. It is the same with dim sum.)

A La carte means that each item you order off of the menu is an individual item, so you can mix and match the items of your choosing. It is generally a more expensive meal. Dim Sum stands for tiny servings of a food, tiny dumplings with various foods inside. Happy eating !!!!
