JK Rowling knew when she started writing the Harry Potter series that she would have exactly seven books in the series. In fact, she had the final paragraph of the final book written before the first book was complete. She has said that while she has no plans on continuing the series, she might write an encyclopedia of sorts with the procedes going to charity.

Yeah, like the others said, she's only doing 7, and always planned on doing only seven. However, she has said she might write an "eighth" book fo charity dealing with the history of the Wizarding World, which I would expect to be be in a somewhat similiar vein as "Quidditch Through the Ages" and "Fantastic Beasts and Where to Find Them" which she wrote under the pseudonyms "Kennilworthy Whisp" and "Newt Scamander", respectively. These two small books were done as Harry's schoolbooks for charity.

The plan is for seven books and J.K. Rowling has talked that she is willing to end the series at Book 7, good or bad ending. There were rumors a little while ago about J.K. Rowling publishing an eighth book filled with deleted scenes from the other books but it is a rumor and has no actual merit. The plan for now is to end at seven. I think J.K. Rowling is tired and and seven books are the way to end before the series goes slack.

Seven years for the seven years Harry will go to school; it is intended to end at 17. JK Rowling has hinted at but in no way seems dedicated to making another series later or perhaps having spinoff books. She's chugging along with the seventh installment as we speak, and I think she might be relieved to rest from her (superb) writing and just roll around in her money a while.

Seven books. Notice that the number seven seems to show up in interesting ways in the books too-- including the number of horcruxes.
