We just got a cat three days ago and all of a sudden I've ended up with a itchy throat and a white thing on the back of my throat...

My throat doesn't hurt and I've sneezed like twice in the last two days.... I thought maybe it was because of the cat or strep or probably just a virus going around.

Strep throat usually comes on fast and furious with very sore throat and fever. A cat allergy gets better when you are away from the cat for a significant amount of time and then gets much worse when you come back home and sit down and have the cat jump into your lap. Cat allergy symptoms can be so bad that you think you have a cold or flu and sometimes your throat itches so much that you feel like you have the cat in your throat.! You can have white stuff in the back of your throat from either cause strep or cat - the white stuff consists of mucus and WBCs fighting off the threat to your immune system - either bacterial or allergen induced. Your body thinks they pose the same threat. Antibiotics will cure Strep but not Cat, and antihistamines should help Cat and not necessarily Strep.

This could very well be coming from the cat. Take a anti-histamine like benedryl. Wipe the cat down with a wet paper towel. This will take off a lot of the dander, which is what is bothering you. It will pass in time.
