Is it true that if you call someone and you tell them how you feel and maybe you give them attitude (previous employer) as long as you dont curse or threatened them you can get sued or in trouble for???

It depends on what you say. If you can stick to the facts and not get emotional, you shouldn't get into LEGAL trouble. However, WHY would you want to try it? I don't think there is any possible advantage to you, and there is always a chance that they could make trouble for you with other employers, even if they didn't sue you. Don't do it.

If your in America you can get sued for anything. If its not recorded, than there is no way that they would win if they sued, because they don't have any evidence on what you said. If what you said was recorded, in some states recording someones voice without them knowing is against the law. Therefore you could sue them. So I would check and see what your states specific laws are for your situation.

Yes, you can be sued. It doesn't mean the plaintiff will win, but you will incur expenses and be inconvenienced.

I don't know who would sue over a nasty phone call unless you threaten them, but you should take the high road and forget about letting previous contacts know about your negative feelings about them. You have nothing of value to gain.

This is the US, anyone can sue anyone for anything. If you caused distraught, even if you did not curse, and of course they will have to prove it, they can sue you.
