I know that "education" came from "ex ducere" in latin, but I would like to know if "ex ducere" really means "out of the path/road".

It means to "lead out" or bring out.

Hmmm. Ducere means to lead, consider, regard or prolong. It is a verb, and specifically ,the infinitive form. Ex can mean out of, from within, from, by reason of, or on account of. Via is road or path in Latin. Hence ex ducere does not mean out of the path or road. I would translate it "to lead out of". Education most certainly did not come from ex ducere.
