if its a male, you will know because the *ahem* testicals hang out very far behind them. they also smell foul. you can press around where you think the *ahem* penis might be and it will *ahem* pop out. Females are much more firendly and they have no visable sexual organs, unless you look real hard. its very hard to determin age also.
WITH THE SQURIMING. they always do that
you have to hold them a lot, and get use to bites every once in a while. hamsters are almost blind and they detect food by smell, so if you have food on your fingers they will do a test bite to see if its good to eat. they are very jumpy for a couple weeks but after that. they become very calm. try feeding them by hand, treats, seads, ect. this will help them become more comefortable with you. try not to make loud noises because this can frighten them also. just work with them for a little bit a day and they will become very friendly. my hamsers used to LOVE poptart crusts.

If you flip her over and look between her legs, you should be able to tell easily. Male hamsters have unproportionately large scrotum's for their size...hard to miss. As for the skittishness, it all depends on the individual hamster and their personality. Some hamsters never seem to get accustomed to human interaction. However, most hamsters that I've had warm up after a little while. The key is not to wake them up during the day and try to play with them. They're trying to sleep and don't want to be bothered. If you wait until night and they're awake, they're much more apt to come out the cage door and see what you're doing. They'll never stop squirming when you hold them. They're such inquisitive creatures; always trying to find a way out of their cage and out of your hands. They want to explore! So, if you hold them back, they'll try to wriggle away so they can be on their way to find new things.

You can look at their behind and see if there is more of a rounding behind the tail; that would be a boy's nuts. If the hammy rump is more pointy, then its a girl. (It sounds so stupid) Boy hammies have HUGE nuts, that seem out of proportion for their bodies and that's why they are easy to mistake for just bulk, ya know?
These changes will only be visible if your hammie is out of puberty, so that gives you an idea of the age right there. There isn't really any good way of telling how old they are unless they are really young or really old

Do you hold it alot? If so, it'll eventually stop the squirming cause it'll get use to your scent and know that you won't hurt it but as far as "it" being jumpy it'll always be that way they're very alert animals, kinda like a rabbit.

When you get her checked out at the vet, they will tell you what the gender is. But, does it really matter?
How has she bonded with you if you are asking when will she stop squirming? I'm confused.

about the hamsters running from you and jumping.
Hold it with gloves so that way it cant bite you. Just hold him every chance you get and he/she will get use to you.

Males "butts" get very bi as they age you'll have no issue fiqureing it out.Hampsters are always a little squirmy but eventualy them get use to it.
