I think there is meant to be some progression in making their punishment proportional to the seriousness of their sins, but the order in which they are dispatched seems arbitrary to me.

My best guess is that it's in the order of their sins on the list of "seven deadlies." Pride, Envy, Gluttony, Lust, Anger, Greed, and Sloth.
Augustus - Gluttony (he was a pig)
Violet - Lust ("is an inordinate craving for the pleasures of the body." She satisfied a food craving.)
Veruca - Greed (She wanted everything...NOW!)
Mike - Sloth (All he wanted to do was sit around and watch TV.)
Why they didn't get kids to exemplify all seven deadlies - who knows?

They left in that order because they came to particular parts of their "tour" that prompted them to act like brats at that specific time. Once they showed their true colors...they were out.

i don't know why they leave in that order.maybe the producers of the origanal had a certain reason for doing it that way but i am not sure
