To just send messages, email is good. The various messenger services (Yahoo!Messenger (Y!M), AOL Instant Messenger (AIM), GoogleTalk, MSN Messenger, ICQ, etc.) is a good way to have a good interaction. You could also look into some of the various chat rooms or IRC channels that are available (or even available through your IM client/service).
For voice, cheapest is probably to use an internet to internet service, such as Skype or one of the newer IM clients mentioned above. Skype for a subscription will allow you to dial a real phone line elsewhere (unless a promo weekend).
If you will be making lots of phone calls, I suggest checking in with your phone company (both land line and cell) and see if they offer any special packages to dial a specific region. Then compare that price to your current per-minute price and current/planned usage, and see what works out to be least expensive.
For example, Verizon long distance has an international flat rate plan for $0.95/month with $0.93/minute, an international choice plan for select cities for $4/month with $0.10/minute to Puebla, Mexico, and an international choice plan with unlimited country calling, but unsure if it is available in Mexico... As for what is best, I guess that depends on just how much interaction you want (text only, voice, time delay), and for what price.

Skype is best. If you both download Skype, all the calls are free. If you call Mexico from your computer to a land line, it costs 10 cents per minute.

I would say an instant messenger. Yahoo, AIM, MSN...all work about the same. Personally I use Yahoo and AIM. They work about the same. Sometimes AIM disconnects...Yahoo tends to do a bit better. But really, it doesn't matter which one.
