When it is ripe. That will be when the color of the squash is a light beige with a greater absence of green on it. It can be kept in a dark cool place for months to enjoy all year round. I love it baked even better than mashed. Try it. You'll love it!! Cut the squash in half lengthwise. On a foiled or non-stick pan place the cut squash with the skin side up. Bake at 350. It will be done when you can easily stick a meat fork into it. Scoop out the meat of the squash and mash it. Put some butter on it and serve. DELICIOUS!!

Chow!!

In addition to the color, another sign is that the skin of the squash will be thick enough that you can't pierce it with your fingernails. If you pick them while the skin is still thin, they won't keep nearly as long.
