Is it just my freak girlfriend who calls this culinary delight by such a strange name?

no... an egg banjo is just an egg sandwitch when the yoke is still runny and when it spills out the sides it nearly always drop onto your belly. so when you try and wipe it off with one hand it looks as if your playing a banjo...get it

when i was in the army in germany,we used to call a toasted sandwich with egg+pepper a "egg banjo",but with cheese aswell.sounds nice i will try that tonight,i will let you know what it is like

An egg banjo in Algeria is an egg sandwich fried in deep fat until crisp! lovely !

Nope, but heard of a "one eyed jack". Cut a hole in the bread put butter on the frypan, put one egg over the hole, and cook easy over.

Hmmm...with grilled cheese? Interesting, possibly good, but way too bad for my heart and cholesterol.

my boyfriend has always called an egg sandwich....no cheese mind a egg banjo.

I personally have never heard of it referred to like this but I was curious after reading your question and looked it up. Apparently it is a common slang term for a fried egg sandwich!!!
