You might consider spraying the top of your car with NaturVet's "YUCK! No Chew Spray." It's mainly advertised for its bitter taste, but cats have a very strong sense of smell. It's helped me keep my cats from using certain furniture corners as scratching posts.

I used to have a similar problem when a bird sh*t on my car - I had to stop going out with her!
Seriously, all you can do is a bit of "training", maybe spray some water on it everytime the cat goes up there. Not a hosepipe - something gentle will do like one of those little handsprays for plants etc.
Also any sort of citrus smell will put them off to.

You could set empty soda cans full of pebbles (tape the tab hole shut) or something else that will make lots of noise on top of your car so that it frightens the cat but doesn't harm it. You will have to pick up the cans though.

rub lion poo into the roof, cats wont come within a mile of the car, nether will the sexy blond girls you were hoping to attract in you posh soft top.
