You are talking about 1500 sq.ft. (1500/144)*3k btu=about 30kbtu.But a lot depends on how many windows(0 used here) and how much insulation(if well insulated could use half) and of course where you are talking about.(England or Europe ain't the Sudan. Also if you are on the top floor or in a basement. All air conditioners say on the box how many sq. ft. they handle(8ft ceiling

Agreeing (largely) with Paulofhouston, I'd estimate a load of 12.6kW, his 30kbtu is about 9.5kW. Given that you're probably not opening hours before your first customers come in, you'll need an extra bit of power to get the restaurant cooled quickly, so err on the generous side. The overall cost of slightly larger equipment isn't really that much. Make sure you get an 'inverter' model, as that will run more smoothly and match your requirement for cooling better as the evening changes. You'll need at least two cassattes in the room, to distribute the air effectively without causing draughts. Talk to your local air conditioning contractors for quotes

You really need a professional to size a unit (or units). They will need to address the size of the building, the number of windows, type of insulation if any, and the internal heat sources such as ovens and cooking ranges.

You will also want to be sure the unit is large enough to quickly cool down the space since there will be a good bit of residual heat in the area since it won't be cooled all day.
