Well that's very difficult,and frankly I don't know if it is possible,to be 100% sure about the animals gender without checking their genitals....But there are some basic facts you can try and check,like the size of the animal,in general,males are bigger and taller and have more muscles than females.Also in dogs(don't know if it's that way for horses too) males have bigger heads.Female animals are wider at the pelvis area(because their body is constructed that way to make it easier during the pregnancy and labor) and male animals are more massive at the shoulder area,the front part of the body.
But still,this isn't always the case and even so,it is tough to judge about those things if there aren't animals of both gender present(that way you could at least compare the two animals).The only way to be absolutely 100% sure is by checking their genitals.

If you see a foal with its head under a horses hind legs, it is nursing it's mom.
Also, male horses pee in front of their hind legs, females pee behind the back legs.
Female dogs squat to pee and males lift a leg or just pee in front of their back legs, like horses.

females are more rounder on the butt are like thier haunches i htink its called. but yea they are just rounder. this dont always work becuse you could have a fat horse
