Go for play lists. You can either drag songs to create one or use the settings to make automatic lists such as all songs from the 90's, or all in a certain genre such as jazz or rock. It cuts way down on having to listen to songs you don't like.

That is really up to you. I make sure that I enter a "Genre" type for each song. That way, I can select a particular genre and listen to all the songs that I would have listed under that genre.
It is sort of a playlist. Creating playlists or my way above will take time depending on the size of your library.
I personally find using genres better than using playlists because if you create lots and lots of playlists, then you end up with a huge list down the side of your iTunes main window! I started out using genres and now, everytime I download a song, I make sure I class it into a genre so my list gets updated regularly.

It is really up to user preference.
