What happens to the remaining, living siamese twin? I know if they're joined at the head that the other would die too, but if they were joined at, say, just the hip, the living siamese twin would have a dead body attached to him?

Theoretically the reason that they are still joined is because they share vital organs.
Once a twin has died the living twin gets all the organs and the dead twin is removed.

Sometimes they both die especially if there was an infection / virus

If it is due to organ failure of a shared organ then bothe will die together. If only one twin dies the other will die in a short time as toxins are realised by bacteria attacking the dead twins organs..

they could attempt to eliminate the twin that died. in the event that they weren't related via important organs or it wasn't too risky to cut up them, they could have been separated at beginning so this would not be a controversy.

That's a good question. I would imagine it depends on what internal organs are shared as if one dies I would imagine they both would.

Unless the dead one is removed, sepatitis sets in due to the fact they share blood vessels and it will kill the other one.
