It is ripe when the silk at the top of the cob begins to dry and turn brown. Make sure you eat it soon after picking because it loses its sweetness rather quick.

Think brown-haired beauty. The corn will be ready when the silks turn brown and dry. To be sure that you don't miss the prime moment when the corn is at its best, you can try an ear or two before the silks get good and brown, but you'll see that most of the kernels aren't quite plump and sweet yet. But the day the silks turn brown and dry is the one you will write down in history as having the best corn you ever tasted.
Make sure your corn is protected from raccoons by then. As soon as the tassels on the top of the stalks begin to show, the raccoons will be checking out your garden. If there's no fence, or if the fence is low and not electric, they will likely steal the ears just before the silks turn brown.

So am I! Apparantly once the cobs can be seen, if you just peel back the top of one the leaves that wraps it, you will see if its ripe or not.

pull a husk down and press into a kernel with your thumbnail. if it squirts it's ripe.
