It has to do with organic chemistry. Basically, bleach has chlorine in it, making it a very unstable, reactive compound. Imagine the Rambo at a communist convention: the chlorine hates being there.
In short, it will react specifically with the types of compounds that compose organic compounds (namely hydrocarbons) and otherwise cause chain reactions that strip the life-chemical into non-life-chemicals.

I know it's a lot of hand-waving, but that's the basic idea.

btw: bleach has no hcl in it, but a similar, safer form.

Simply put, Bleach is the common name for a very diluted form of Hydrochloric Acid, or HCl. Organic materials always have Carbon (which is why organic chemistry always uses carbon).

Carbon is trying to add on more electrons, and Hydrogen (H) and Chlorine (Cl) are trying to give their electrons away. In these subatomic reactions, the electrons shared between carbon atoms (carbon bonds) will adhere to a single carbon atom or molecule, thus breaking down a larger molecule.
