At the risk of sounding extremely pretentious, let me just say you've gotten some horrible answers so far. I'd advise to ignore the ones that are suggesting current top 40.

My suggestions are:

Velvet Underground - Velvet Underground & Nico
--this was the groundwork for all alternative music that has ever existed. if anything, essential just for the historical importance...and yet so many people don't know about them.

Beatles - Rubber Soul, Revolver, Sgt. Peppers..., White Album, Abbey Road
--obvious choices and essential nonetheless.

Miles Davis - Kind of Blue

John Coltraine - A Love Supreme

--these two jazz albums are the greatest ever recorded, although they have been built up to the heavens by most critics and fans alike, there is a reason for it.

Beach Boys - Pet Sounds
--not the "surfs up" Beach Boys most people think of. They really grew up with this album and it may be the best pop album ever.

Pink Floyd - Dark Side of the Moon

Radiohead - OK Computer
--again, tons of critical acclaim for this record, making people react that it's overhyped, but i still think it's a freakin' amazing record.

Nirvana - Nevermind
--although not the first to do the type of music they did, this album single-handedly changed the direction of music in a way no other album ever has.
