Because Italy was the culteral center of Europe during and after the Roman Empire. Also...the Catholic Church played a huge role in music history and the Vatican is located within Italy. So it stands to reason that Italian had a huge influence when determining standard music notation because the area played such a huge role.

It mostly(classical music) comes from Europe I.E. Italy and other places. At various times in history the elite by patronage caused different parts of Europe to be considered to be the best culture of that time for instance operas had to be from Italy to be good etc.. It continues even into today. Peace.

You mean opera I assume - I think because a lot of the main opera either came from Italy, or was translated into Latin (and later to Italian) to be performed in front of the popes of history. Uh, that is kind of a guess, but it is reasonable somewhat, no?
