I select the real time scan and then close the window and theres no icon. same thing happens when I minimize it. It dosent even show up as a process

Weird stuff! Try uninstalling and reinstalling, because this doesn't happen to me.

If it bothers you, you can set it to show in the system tray. In Windows Defender go to Tools > Options and scroll down to where it says "Choose when windows defender shows in the notification area" and select Always. And just FYI the process belonging to Windows Defender is MSASCui.exe and it is right there in task manager, go ahead, take a look.

Windows defender will not have a icon in the system tray.
