Some models simply have a timer, others have a thermostat built into them.

Mine at home has a thermostat, which can be problematic when toasting several pieces of bread in a row.

I think it all has to do with the little numbers. For example; #3 might be for barely toasted and #5 might be a little browner. They fixed it so it cooks for a certain length of time with each number.

You're not serious are you? A toaster is not sentient, it doesn't "know" anything.
That should be enough information for you to figure out what you want to know.
