Clear, flat, smooth skin. Symmetrical features. So, for example, if the model has a large nose, it's straight.
Some photographers, designers, and art directors look for unusual beauty -- exaggerated features that are still pleasing and interesting to the eye. Could be a large jawline, small ears, long face, low hairline, etc.
Beauty is in the eye of the beholder, but when you have something to sell, it's about the sale... :)

I model and I went to a professional agency called Image International. These are the features the girls usually have:
-full lips
-straight, white teeth
-no pimples, zits, or blemishes
-smooth, hairless skin
-unique features: Different eye color, beauty marks, etc...

their faces tend to be very balanced - if you drew a vertical line down the middle of their faces, the right side would look very close to identical to the left side.
that is not common, really.
if you can hold a mirror with a flat edge along that center line, you can see what you would look like if your face was all the way the left side looked
Turn the mirror around, and see what you would look if your entire face was matched to the right side.
the 2 just don't look alike.

It's all in the bone structure. Symmetrical facial features. Generally wide, or well spaced eyes. The most crucial aspect is the three S's...Smile, Sparkle, Sex. And not to forget the "it" syndrome, whatever "it" is they have it.
