For Greek, go for "Greek Mythology" by Walter Burkert, who is considered to be the founder of modern myth study. I've read it, and it's simply excellent.
http://en.wikipedia.org/wiki/Irish_mythology will give you a great springboard for Irish mythology. So will http://www.luminarium.org/mythology/ireland/
For Egypt, I'd reccomend http://www.touregypt.net/gods1.htm
I crawled all over that a while back, very good information and very well-organized.
