Psycho - because he made it for filmmakers and not for whatever audience (see Hitchcock by Truffaut) and it is brilliant.
Vertigo - who, but Hitchcock, would have dared to cast James Stewart as a (in the end) veritable sadist (read the original Boileau/Narcejac novel).
Frenzy - Barbara Milligan: In the beginning Rusk kills his ex-wife which is a very cruel and detailled scene. But when he kills Ms Milligan the camera slowly leaves the room, goes down the stairs, leaves the house and everything is left to the viewer's imagination which is even crueler - psychologic/manipulatory film at its best.
North by North West - James Mason?! The corn field?! The fake Frank Lloyd Wright House?! Optics?! Great movie.

I've only seen some of them, and I liked the ones I saw (Vertigo, The Birds, Rear Window, Saboteur, The Man Who Knew Too Much)

I think my favorite would be The Man Who Knew Too Much, but I don't have any particular reason.

The Birds is one of my favorites. I also like it because it was filmed in and around Mendocino, Calif. The house they built for the movie remained for quite awhile and some of the streets there still look the same. Imagine.. you can still drive or walk on the same streets that Tipi Hendren and the town folks ran screaming for their lives! hehe...

Vertigo. It's just plain crazy. Plus, you can't get any better than Jimmy Stewart and Kim Novak. It's a classic.

I like The trouble with Harry (1955) because it is a dark comedy. It is funny and mysterious at the same time.

"Notorious" or else "To Catch a Thief". Definitely doesn't get any better than Cary Grant with either Ingrid Bergman or Grace Kelly.
