The best X-men storyline remains the Phoenix Saga, which you can pick up in trade form at any major bookstore (Barnes and Nobles, Borders). In addition to that, if you want to read the X-men as a whole, go with the Essentials, which start from the beginning and contain all the Uncanny X-men line stories. Other notable stories that are in trade form are Fatal Attractions, which is a bit harder to find. I personally enjoy the Jim Lee era, which is what the fox cartoon was based on, and they have trades that say X-men Visionaries, Jim Lee. The Ultimate line referred to above is not the official X-men, but instead a retelling of it, with stories updated to be more relevant than the original stories that were put out in the 1970's.
Currently the Marvel Universe is in a bit of turmoil (there is a civil war going on) so picking up a current issue of X-men may be a bit confusing.

Ultimate X-Men (from what I gather) is extremely (no pun intended) well written, and a very fun line. Worth checking out, for sure.
Having said that, telling someone that Ultimate X is the place to start reading about the X-Men is a HORRIBLE IDEA!!! It is a separate timeline. A separate alternate universe. One with only a few years of backstory. Doesn't it make more sense to start with the main Marvel Universe, one with decades of past storyline?
Avoid Ultimate X at first. One previous poster suggested like 5 or 6 titles up there. GET THOSE. Buy things from the 80's and 90's - especially GRAPHIC NOVELS. Ask the guy at the comic book shop counter if you can't tell what a graphic novel is. And when in doubt, consult wikipedia, marvel's wiki, marvel's main site or cbdb.com

Look for the X-Men Ultimates. It is one of the best series I have read. Most of the Ultimate X-Men series come in 10-12 different volumes but just the other day I say one big collection of all of the volumes put together in one comic book. That is the best deal I have ever seen.
Of course the seperate volumes come in better quality paper. It's glossier than the bundled volume but it's the whole comic is the same. If I knew they were going to bundle all of them in one book then I would have waited a little longer....

if you truly want to learn about the Xmen, and you do not want to spend a fortune look for the Xmen reprint series of Classic Xmen or Xmen classics. I don't know Estes so no help, but online sources are a good area to buy comics.

I just wanted to say thanks for the answers above. I too wanted to start reading the X-men, but got overwhelmed with the different titles out there. I only have one more cirteria to add. I have to make sure Beast is included.
There is a good list at http://en.wikipedia.org/wiki/X-Men that lists what members are part of what teams. Now at least I know what to look for.
