All the photos we have seen show them wearing a white strip of cloth with the rising sun on it for bravery. Besides they only had enough fuel in the plane for a one way trip and their bomb was rigged to explode when the plane made contact with an object. Some of the planes had their landing gear removed and the planes were launched from a wheeled sled insteadof takingoff in a normal manner. Thhis cut way down on the training time as take offs and landings take the longest to learn.

They did wear helmets. A head injury on take off or during turbulance would be detrimental to their mission objective. The couldn't afford to crash in the ocean.

It was a fashion statement and they thought it could actually block the mind control rays that would tell them to turn the plane around.
