Because the components of the terms required to accurately describe a word consisting of a single syllable have multiple syllables that add up to the resulting five in the term in question.

The prefix mon means single or one.
The term syllabic means of, relating to, or denoting syllables.
The o after mon is added for appropriate grammatical formation when joining the prefix mon with the term syllabic.

Mon = 1 syllable
Syllabic = 3 syllables
o = 1 syllable

1+3+1=5

Ergo, monosyllabic has five syllables.

For the same reason "pop" is an onomatopoetic monosyllabic palindrome. Or the word "obfuscation" is confusing. Or that we drive in a parkway but park in a driveway. Or if we take accurate notes during a pagan ritual, we would write right about the rite. Or how about "they're going there to get their hair cut."? And my personal favorite, "jiggle it a little, it'll open." English is a cwazy wangwage, eh wot?

because the word "monosyllabic" is the propper word used to define something that is monosyllabic, it is not a monosylabbic word itself, just the term.
