There are many companies out there that deal in supplies for the catering industry, Bookers,3663,Supreme,Breaks to name a few but try your local suppliers through Yellow pages for prices on what is in season the big companies set there prices but smaller local companies will change prices up & down if food is out of season so shop around

For spices, I know some restaurants buy from Rafal's (permanent store at Eastern Market).
