I want to setup a Linux server, a linux database. What is the best way to go about it.

Also, how do i protect it from hackers and viruses?

I would love to also use it for a email server for MS Outlook, is this possible?

To set up the Linux Server, you can try out either the software provided by Red Hat Linux or Suse Linux. The software usually has a 30-day free trial period. Both the software packages may have provsion for antiviruses and firewall to safeguard against possible viruses and hacking over the Internet.

Find the distribution you want. Many go with Red Hat, but ubuntu is very user friendly.

Your firewall for linux should be iptables and will come with your distribution.

As for database, use mySQL (it will also come along with your distro) as interacts well with Perl/PHP.

For MSOutlook you can use WINE or VMware to work with Windows apps.
