You couldn't add someone in the Uchiha clan, because Itachi killed them all off with the one obvious exception.
They could be in the Hyuuga clan, either the branch house or the main house, Nara, Aburame...just about any canon clan, with the obvious exceptions.
Any of my fan characters, really. Except for Hanako, since she's a work in progress...

You can't just add another Uchiha. Itachi-san killed all of them. Maybe from another clan like Hyuuga, Nara, or Akimichi but no Uchiha.
