First of all, to clarify, any part of the Americas in which they speak a Romance language is generally referred to as Latin America. So, that includes all of the Spanish speaking countries in the Americas, plus Brazil, and some people would add Haiti, too. This region can also be referred to as "Ibero-America" referring to the countries that speak Spanish and Portuguese.
As for why it's called "Latin America" when they don't speak Latin, it refers to the Latin/Romance heratige of the European countries that first colonized them. Since that's all I know about it, and I don't like to copy and paste information from Wikipedia articles, the article that I've linked below has a more thorough description of why exactly it's called what it's called.
