It depends on the procecure...A and a combination of B &C I've used...as well as laying them down and pulling their nose sideways (so it's curved and resting on their shoulder). There's also head restraints that hold the sheep's head while the body is free to be worked on.
It depends on the size of the sheep, the size of the shepherd, what the procedure is. Some of the larger breeds - a Rambouillet ram and a 100# shepherd...probably not going to get the ram sitting up (will outweigh the shepherd by 150+#).
I had a 250# Polled Dorset - no way I was going to tip him either. He was bigger, longer. He was taught from lamb sized to stand tied while his feet were trimmed, etc.
