Wash your hands with cold water for a minute right before going into the interview, then your hands won't be sweaty for the introduction hand shake (don't let them be ice cold though, that's not good either). But when you are about to shake their hand at the end of the interview and thank them for taking the time to meet you, try to nonchalantly rub your hands down your pants as you stand up to wipe off any sweat that might have accumulated. Throughout the interview, try to keep your palms open and away from one another. If you clench them or hold them together, that will keep the heat around your hands and cause them to sweat. Keep your palms open on your lap or on the arms of the chair so their open to air.

You can also try getting this stuff called "Certain-Dri". It's like a liquid, prescription-strength, roll-on deoderant that you put on BEFORE bed and it's supposed to help control sweat the next day. I know people that use that for underarm sweat, but I imagine it could work for hand sweat as well. You could probably get it at any CVS or drugstore.

Also try to wear light clothing so you don't get overheated in a warm office. If the rest of your body is hot, your hands will feel hot. Same with socks. Wear light, cotton socks so your feet don't overheat, because when your feet get hot, your hands might too (at least that's what happens with me). So try to keep the rest of your body cool. But most of all, RELAX! It's the stress that makes you nervous which causes you to sweat, so take a couple deep breaths before the interview and convince yourself that everything will be ok.

Good luck!!!

If this is a big problem in your life, doctors have begun treating excessive sweating (in hands, armpits, etc) through botox injections. But, if it is only for job interviews, I would just wipe your hands off before shaking hands with the interviewer.

there is nothing you can do to prevent it, but a hint is to keep kleenex or a cloth in your pocket to dry them off with.
