Self portrait (face), everytime your teacher looks at it, he/she will remember how great a student you are. Self portrait isn't easy anyway, it is hard to get the expression right because you want to convey more than just... you.. a self portrait should contain at least some sort of emotion.

As a former art teacher and a practicing artist, I can tell you that anything you draw and give to your teacher will let her know that you really care about what you learned from her. I would suggest doing something simple and familiar to you. Here are a few ideas to get you started: a pair of your shoes as if they have just been kicked off, a simple white mug with no decoration sitting on a window sill, or a few eggs on a plate with a strong light on one side so you can see the light and shade. Best advise I can give is "Keep it simple". We all try to do too much and so one or two items makes the best sense. Good Luck!

I'd recommend a portrait of your teacher, perhaps in the act of teaching / making a point, but not looking directly at the viewer. Or, perhaps, a quiet moment, when she's reflective and thinking about something -- a candid portrait. (Maybe you can get a friend or another teacher to help you getting a photo that you could work from). Look at some of Rembrandt's portraits, or Da Vinci (he was the master of shading -- also called something else -- Italian -- I forget). Use what she has taught you, with charcoal, etc. It is something that she could treasure for years to come.
Don't forget to sign and date it!

Try to remember what your teacher had mentioned she was doing on her own time. Was she improving her painting techniques or working on a large drawing project? What about finding a book on that subject? Try using a single light on a desk and a mirror and draw a self-portrait. Don't pressure yourself, it will show, have fun and keep it simple; you may become a Rembrandt later on in life, but she will appreciate your work as it is now.

A nude portrait of yourself. This is the ONLY way to make her unsderstand how you really feel about her. Anything else will just be a token jesture and will get a half hearted response.

Use the many artstyles she taught you and somehow incorprate them into a picture of how that class went for the year or semester or however long it lasted. show her how much you enjoyed the class and listened. I love art so i hope this helps at all.
