Well...strictly fantasy speaking...I would say the DragonLance series. The ones written by Margaret Weis & Tracy Hickman are the best. Start with the Dragonlace Chronicles Volume 1: Dragons of Autumn Twilight, or get the trilogy set! These are some of the best fantasy books I've read. I laughed, I cried, I got angry, and everything else in between.

Wit'ch Quintet by James Clemens (first book: Wit'ch Fire)
Valdemar books by Mercedes Lackey (first book: technically, in terms of the history of the world of Valdemar, Black Gryphon comes first, but you should start with the Last Herald-Mage trilogy -- Magic's Pawn, Magic's Promise, Magic's Price)
Rhapsody, Prophecy, Destiny by Elizabeth Haydon
Incarnations of Immortality septet by Piers Anthony (first book: On a Pale Horse)

and of course, the goddess of fantasy, Sara Douglass: stand-alone novel Threshold, and then the Wayfarer books (but be forewarned, #6 isn't out in the US yet, I had to get if off ebay from Australia). The first Wayfarer book is BattleAxe, but if you're buying it in an American bookstore, they changed the title to Wayfarer Redemption. Then read her other stand-alone, Beyond the Hanging Wall, which is tangentially related to the Wayfarer books.

Try some of David Eddings stuff Margret Weis and Jennifer Fallon have some good series as well

Books by Raymond E Fiest, Janny Wurts and of course Tolkien, your best bet is to go to your local library or book store and look in the fantasy and sci-fi section
