I take it by your question that your current tax disc is two months out of date. If so then i would not dare take the car on the road as if you are stopped by the police you are running the risk of receiving a very hefty fine and your car being towed away( This happened to my mate who got walloped with a bill for garage fees and the cost of towing the car. It resulted in him paying £800 between fine and bill and 3 points on his licence.). If your tax is out and you have a bump in the car then i think your insurance can cancel your policy under their terms and agreement, as you need the policy and MOT to tax the car in the first place.
If you don't have to travel don't, but if you do why not try public transport, may save you a few bob in the short term.
You can drive into the next day when your tax runs out as long as you can prove that your journey began before the disc ran out. I know this as i am a taxi driver.

if U mean the old car tax is 2 months out of date then no U cant, even if U want to drive for 1 day, ie the last day of the month, U have to buy a tax disc for that month, its crazy i know, but that the way it is now, U used to get a grace period, but not any more

As the entire system is now on computer and the police check the records with the central computer, if your old tax disc is valid up to the start date of the new one then I would think that you would be OK, however if the old one has run out then the tax is only valid from the start date.

No. I called the DVLA about this, as it didn't state anywhere in the literature that came with my new disc when it was valid.

It would appear that if you were driving through the night at the change of your month when your tax is due, if you changed the disc before you set off and were stopped before midnight, you could be fined for failing to display a valid disc. However, if you didn't change it before setting off and were stopped after midnight you could also be fined for failure to display a valid disc.
