Embedded operating systems run in microprocessors that are not inside of computers, but rather in other kinds of "appliances". As an example, your HP Printer has a microprocessor running inside it, but obviously it would not be appropriate for that to be running windows, would it? More good examples of embedded systems are the handheld GPS units on the market today. A simple example is your microwave oven.
