First you can delete if you know the path. But if delete the movie you need to manually upload to your IPOD. If not you will update your ipod which the movies have been removed. You can follow the direction in the manual how to setup your itunes not to update as soon plug it into your computer.

Syncing videos to your iPod
If you have a Fifth Generation iPod, you can use iTunes to add or sync videos to your iPod just like you do with your music. If you've set iTunes to manually manage your music, you can add videos to your iPod in the same manner—just drag and drop videos or a playlist of videos onto your iPod icon in the iTunes Source list.

If you've set iTunes to automatically sync music to your iPod (or you've set it to sync music in selected playlists only), you've already done half of what's needed to sync video to the Fifth Generation iPod. Here's how to complete the process.

Connect your Fifth Generation iPod to your computer, then open iTunes.
Open iTunes Preferences.
Mac users: From the iTunes menu, choose Preferences.
Windows users: On the Edit menu, click Preferences.
Click the iPod tab, then click the Videos tab below it.
Select one of the following options to set video syncing:

If you'd like to have iTunes sync all of the videos in your iTunes library to your iPod, select "Automatically update all videos."
If you'd rather have iTunes sync only videos in selected playlists, select "Automatically update selected playlists only," then select the checkbox next to any playlist you want to sync.
If you don't want to add any videos to your iPod, select "Do not update videos." Please note that if you currently have videos synced to your iPod and then select this option, it will remove the videos from your iPod.
Click OK.
Once you close iTunes Preferences, iTunes will begin updating your iPod based on the preferences you've selected.

Note: If you manually manage your audio files, you must manually manage your videos. If your iPod automatically updates your audio files, you must choose one of the two automatic update options for video or choose not to update videos. If the iPod is linked to another iTunes library for automatic music syncing, you must change the link to the current iTunes library or change the music sync setting to manual in order to sync videos to the iPod.
Managing songs manually on iPod
Syncing your music library on iPod is easy. By default, iTunes automatically updates iPod's music library whenever you connect iPod to your computer. iTunes transfers new songs you've added, and erases songs you've removed.

You can also transfer music manually
Manually managing the iPod music library is also helpful if you use your iPod on multiple computers or with multiple user accounts. Additionally, it also allows you to delete a song from your iTunes library, but keep it on your iPod. Make sure you have a backup copy of any music files before deleting them. Follow these steps to setup your iPod to manually transfer songs.

Watch a QuickTime video of the steps to manually transfer songs to your iPod.

Connect iPod to your computer.

Open iTunes.

Select iPod in the iTunes Source list. If you don't see iPod in the iTunes Source list, then click here if you use Windows or if you use Mac OS X click here.

Click the Options button. If you don't see this button, make sure you clicked on the iPod icon in the Source list (see above).

Tip: If you have iTunes 4.7 or later, you can also access iPod settings through iTunes Preferences.

Select "Manually manage songs and playlists" and click OK.

Now you can copy individual songs and playlists from iTunes to your iPod. Just drag the song or playlist to the iPod icon in the Source list. Tip: You must first import audio CD's into iTunes before you can move them to the iPod. If you're having difficulty copying songs to your iPod, click here.

You can also set iTunes to automatically update iPod with selected songs or playlists only. This is useful if you only want to transfer a portion of your music library to iPod.

You can't transfer songs from iPod library to iTunes, but you can use iPod as a hard disk to transfer music files from one computer to another.

Of course. But there is one vital thing to realize that nobody else mentioned. In your itunes preferences, you MUST turn off automatic synchronization. If you forget, THIS IS A MAJOR MISTAKE. IT COULD CAUSE YOU TO LOSE ALL OF YOUR MUSIC. Otherwise, the computer will make the computer playlist and the iPod identical, thus deleting anything not on your computer. It's simple to turn off, but necessary!! Then, nothing will be deleted, just added to your ipod. Beware, sometimes you have to have your ipod plugged in to change settings. It will ask you "Auto-Synchronize?" Say no, and turn it off!!!

Here is an anecdote: One time my friend had 80GB of songs on ipod and music etc and his computer crashed. So he lost it from the computer but it was obviously fine on the ipod. Then, he wanted one more song so he thought he could add it from someone's laptop. Well, since "AUTO-SYNCHRONIZATION WAS ON" the computer (rightfully so, considering he had the wrong setting) did what it was told to do and deleted all 80GB leaving him with one song only rather than his 30,000 songs. AND HE CAN NEVER GET THEM ALL BACK BECAUSE HE DOES NOT HAVE THE CD'S OR ANYTHING ANYMORE AND HIS COMPUTER IS TOAST AND HE NEVER BACKED ANYTHING UP!!!

Yes. They do not use radio waves to play the file. After all, you wait for it to save to your iPod for a reason.
