I do not understand where the potassuim goes.

Hi there. Potassium nitrate and sucrose react (in a particularly messy fashion) according to the balanced equation below:

48 KNO3 + 5 C12H22O11 --> 24 K2CO3 + 36 CO2 + 55 H2O + 24 N2.

The potassium cation doesn't go anywhere. When all the gas and steam is gone, you're left with a pile of wet potassium carbonate. Have fun with this one.
