Personally, whenever I go to Las Vegas I try to stay in the middle of the strip (Bellagio, Bally's, Paris) or just a bit to the south (Mandalay Bay, etc.).
Everything is pretty centrally located from there, and you're not going to be paying a fortune in cab fare if you decide to cruise to one hot-spot or another.

On the Southern end the Luxor is probably the best "priced" hotel. It is very nice. The Mandalay Bay is a bit more expensive. The Excaliber is just North of the Luxor and somewhat cheaper but I have never been impressed well enough to stay there.
If you want a very good hotel that is off strip and decently priced you can't go wrong with the Orleans. Most people will tell you that this hotel is the best bang for the buck in Vegas
If you have already checked some rates compare them against http://www.utopia.worldventures.com I have gotten some real good deals here before.

The best deal at a nice hotel is the Golden Nugget. You can get in there for the $50 per night range.
It is as nice as the places on the strip like Ceasar's or Bally's and is much cheaper.
There is a level up to where you are going to pay more for the Paris, Alladin or New York New York -- because they are on the strip and newer.
Then there is a jump to the Mirage and then another jump to Venetian and then Bellagio.
The nicest place right now -- and priciest -- in the new Wynn hotel.

Monte Carlo is nice and cheap. Much lessor known than other hotels. It's very beautiful, updated, clean, etc....just not as big as some other themed hotels (mandalay bay, nyny, mgm, paris, bellagio, etc.) Great experience!
