the same reason that if you boil water in a microwave and bang the cup it shoots up / explodes. Something to do with the heat expanding the air bubbles in the water. when shook this releases the air quicker, and in an enclosed space it has nowhere to go. I dont know why the soap makes it worse.

Physics 101, the boiling water heats up the air in the sandwich box, the heated air expands and the top blows.

It doesn't need soap!

About 1/4 filled with water (MAX) and a good shake will heat the air rapidly causing it to expand.

rapid expansion of the air inside. Hot air has more motion to it, and heating all that air in the tight space of the lunch box caused the air to expand rapidly and blow the top off.

The air warms up, expands, increases the pressure and pops the lid. Also because gases are less soluble in hotter water, so they come out, increase the pressure too.

You don't need boiling water.

Cold works too. Not as fast but it does.
