Despite what you might think. . .the checks. . .and procedures. . .are theirs. . .which means you must comply. . .and it helps to be calm and have a smile on your face even if you don't like how they are handling you!
Basic requirements:
1. The check (or counter check, which they would prepare for you to sign) needs to have a monetary amount, legal amount, named payee (your name or "cash"), date, and your signature that matches with what they have on file (make sure it does).
2. You need to produce at least one piece of photo ID although. . .these days. . .swiping your Debit/ATM card usually is enough.
3. There needs to be enough "good funds" in the account to settle what you are seeking to cash. . .plus any overdrawn amounts the bank system displays to the teller.

Make the check payable to yourself and then endorse the back showing that you received the money. It seems odd, but that method shows that the payee (you) signed for the receipt of the cash.

You simply put your name as pay to the order of and write the check like you would any other check, then you sign the back of your check like you would on cashing any other check with your account number under your endorsement.

I make it out to myself. I put my name on the "pay to" line. Then I sign at the bottom and on the back. They never question it. Some people make it out to "cash".

ask a bank teller how they want it filled out.... it helps if you're kind of a jerk about it too... tell them you were treated rudely last time and they need to instruct you on how they want it done... if you're loud enough that other customers can hear you they'll help you out pronto.
