What a nice idea!
I'm a scrapbook freak myself, so I can give you some tips. If you want to spend money, you can buy soccer scrapbooking accents at a craft store or online, such as stickers representing soccer balls, nets, stadiums, etc (you may even be able to find 3D ones). Your daughter may use those to embellish her news cutouts and photos. If your daughter is good at drawing, she can make those herself, cut them out and glue them. Or she can use clay to make little soccer balls.
Try to collect as much news as possible on each match that Italy played, from the first one to the final. If you have Italian newspapers at home, cut out the articles. If you don't, you can try the archives at www.corriere.it, or www.gazzetta.it, print out the articles and cut them out. Or use Canadian newspapers, if your daughter can't speak Italian, or both. Same thing with the pictures. Try to find pictures from each match, the goals that were scored, the stadia where they took place, the fans, etc. Each match had a "man of the match", you may want to mention him too, and have his picture framed somewhere in the pages covering that particular match. You may even add a map of Germany highliting the cities where the matches were played. Don't forget to add pictures of the celebrations in Italy after the final -- the Circus Maximus parade and the people celebrating in the streets. If you took pictures of yourself and your family watching the games, include those too. If you have pictures of the celebrations in Toronto, include those. And of course, a lot of Italian flags and a big group picture of the new champions, including their coach!
If you buy a plain scrapbooking album, you can paint the cover in green, white and red, or you can cut out a window with an Exacto knife and put a picture of the Azzurri with the trophy in it.

Try to get some clippings from newspapers...perhaps an italian newspaper. I would add all news articles. And especially the incident that happened to Materazzi, mention what each player was fined (even though we are not happy with Materazzi's)
Maybe do a page for each player - giving a little bio of each.
Also, you can do a page for the last world cup winners in 82. Do you have any pictures of the celebrations in your area? Those would be nice to add.
Can't think of anything else right now.

I would say get pictures of all the players of course, and make the scrapbook red, green, and white, Italy's flag colors. And get pictures of memorable events that took place for Italy on during the tournament, like Fabio Grosso's goal in the last two minutes or something like that. And of course, don't forget to put in many pictures of Gigi, their best player!

she can write like a customized biography for each of the 23 players + Lippi.. with pictures of them, she can say anything that marked her about that player, if she liked him or not, what was his best move, ect..
you can also have the book signed by italian fans, with their comments about the victory..

Lots of pics, biographies, newspaper clippings, celebrations in your neighborhood [pics, if you took any], pics from every game they played and info on every game they played (results, etc..), man of the match(es), flag colors, celebrations in italy, pics of the day after when they partied in rome :-), ettccc.
that's a nice idea, a scrapbook.
you can go to sites like gazzetta.it and find news.
