I don't believe this is actually true - I was on holiday next to a field of cows the other day and they were all in random directions.
However, what you might be witnessing is that all the cows will enter the field at the same time through the same gate. If they are relaxed they will all initially commence to eat more or less as soon as they arrive in the field, this will keep them all facing the same way as they tend to browse for a while in a straight line. As time goes on they will move off in randowm directions and when resting they will sit/stand in whatever way takes their fancy.

permit me attempt a proof: if a predator comes from the comparable path of the wind, they could be actual detected by using scent -- have you ever observed how super cats scent ? yet whilst they arrive from the choice path, it would be not user-friendly to sniff it, because of the fact the wind is blowing against it. So it quite is greater effective to maintain their eyes finding in the direction of the wind is going -- it quite is, because of the fact the southern guy suggested, having their butts agains the wind.

Good point - I have noticed that on occasion. And is it true that if the cows are lying down its gonna rain?
Anyway, its prob more to do with what someone said before about not havin to inhale all that methane...

Because they are expressing a collective view of mankind by pointing there bottoms at the same thing.
I have just thought of another possibility, is it something to do with wanting to eat grass with cowclap already on it.
