I had a plant grow out of our compost pile, from store-bought squash. Will it be good? Thanks.

Look at the stem. When it begins to turn brown or show some signs of wilting, it is done providing nurishment to the fruit.

And as for the volunteers coming from your compost pile, you bet they'll be good. I have them coming from my compost every year. Also have about a dozen volunteer tomato plants this year.

Did this once:

Spaghetti squash changes from creamy white to bright yellow at maturity. Usually, winter squash begins maturing in September or perhaps late August.

Harvesting your spaghetti squash occurs once it has reached its’ buttery yellow or deep orange coloring. The vine tendril opposite the fruit will be now positioned opposite it and will also be brown and shriveled. Another sign of maturity is the squashes' skins hardening. Carefully cut your squash from its’ vines, leaving two inches of stem attached if possible. Avoid cutting and bruising fruit. Store your squash in a cool, dry place such as your basement (temps should be between 50 and 55 degrees. F for storage).

My ONE WORD OF ADVISE -- DO NOT leave in your basement for several months -- that surprise will eventually be an exploding squash blowing really smelly goo all over the walls!! GROSS!! Make sure you only harvest enough that you can eat in a reasonable time frame. Good luck.

I have grown spaghetti squash in the past. when mature they are around 9 inches long and light yellow with no green spots. I am giving you a link that tells how to preserve it. Hope this helps.
