If you have to work at this job, then I guess you put up with it. Don't walk on eggshells or be afraid. If this person gets to you let them know you don't appreciate it.

These situations can be difficult. First of all, you have virtually no chance of changing this person. So... is working for this person really how you want to spend a majority of your waking hours each day? It sounds like you should find another employer, or if this is a large employer, a transfer to another department.
If you don't feel that you have an option to move, you should train yourself to remain emotionally calm and neutral, whether the person is positive or negative, and focus on executing the aspects of your job as professionally as possible. If you are seeking this person's approval, the pain from the bad moments will continue.
As far as what to expect? Well... expect the worst, as it sounds like that is only a minute or two away.

This is your clue to refresh your resume and begin a search for another job. I once worked for someone like that and even though I ignored the person and didn't take it personally, it wasn't the best feeling to go to work. I eventually left and now I'm much happier.

I know exactly what you are saying!! I have a manager who is in her mid-twenties and her Daddy has helped wipe her butt her entire life, so she's the snootiest with her Coach bag and everything. Anyway! One minute she'll be like,"Your staying late, get over it!" (not kidding, she's really said that) and the next minute she'll be playing with my hair saying, "It's getting so long!" in a sing-song vioce.

I haved worked with someone like that. I told people she had a b*tch switch. I did not care how much she yelled and scream. I stood my ground. I did not yell or scream back.
I was cool and rationale, she gave up the screaming at me when she realized that I could not be intimidated.

Walk on eggshells while you look for another job.
Or wait for their career-ending blowup to take them out of the picture.
