Start of with 50. Five sets of ten. As you get better you can do 80 with 4 sets of 20. But the important thing is to do them correctly, and slowly, alot of people don't do it right and use their back instead of abs the go up. Breathe deep breathe often, inhale as you relax, exhale as you crunch your abs. It is a good idea to have someone or something holding your legs, and remember to stretch before and after your workout.

its not how many, its the intensity of each one. if u do a few really hard crunches, ull get a better workout than if u do 25 easy ones. also, add a little variety. dont just do crunches.

Do them until you can't any more. The wait 3 minutes. Repeat. Continue repeating until you want to die, then congratulate yourself, crunches are painful.
Follow Mohamed Ali's advice, don't start counting until they start to hurt. Try to match or beat your previous day every time.

i say at your weight and height if you want to build muscle mass you should do approx. 2 sets of 40 crunches
now the KEY to building muscle is to not do them really fast, take your time, the abdominal muscles are slow moving muscles so it takes slow reps to build them
after about 3-4 weeks step it up to 2 sets of 50, and so on, you'll be looking good in no time
