We put them in the garden to keep moisture in the ground. Pine needles make a very good mulch.
Plus a lot of bugs do not like it.
It is better to use and recycle your debris than to fill up the dump or Landfill.....

Because they have a lot of pine trees in the south and pine needles are a very good mulch, also I would think they would be a good way to adjust the Ph in your soil

For one thing, they're easily available and free in many cases. There are lots of pine trees in the south. My neighbor's pine tree drops lots of needles on one of my beds. I personally don't like them and I constantly rake them out. I personally like cedar mulch.
